How Air Fry Mode Works in an Oven

Oven air fry mode is convection with very fast-moving hot air that crisps food's surface. See how it works, how to set up the pan, and why it can smoke or fail.

Air fry mode in an oven is a form of convection cooking that moves hot air very quickly around the food, drying and browning the surface so it crisps without deep frying. It uses the same fan as convection bake, so understanding convection explains most of what air fry does, along with why it can smoke or turn out soggy.

How it works, step by step

  1. You select Air Fry. Whirlpool's air fry guide says the feature is reached through the oven's controls or the Whirlpool app, depending on the model.
  2. The elements heat the oven. The combination of elements used varies by model.
  3. The convection fan moves air fast. Whirlpool describes an air fryer oven as simply a convection oven with a built-in air frying feature, where convection fans circulate hot air very quickly around the surface of the food.
  4. Fast air pulls moisture off the surface. Dry, hot surfaces brown and crisp, the same way they do in a countertop air fryer.
  5. A basket lets air reach every side. Whirlpool's optional mesh basket sits on a standard baking sheet, so hot air flows underneath the food while the sheet catches drips.

What you'll notice because of it

  • A louder fan than in regular bake.
  • Quick browning on breaded or oiled foods.
  • More room than a countertop air fryer. Whirlpool notes you can cook more food at once.
  • Spatter and smoke if fat drips onto the oven floor without a pan underneath.
  • Crispier results with dark pans or a perforated basket, as Whirlpool points out.

Where it can go wrong

The convection fan isn't running

Symptom: food comes out soft and pale instead of crisp, and you don't hear the fan. Air fry depends on the fan, so a failed fan motor disables it.

Smoke during cooking

Symptom: the smoke alarm goes off. Fat dripping onto hot surfaces is the usual cause. Whirlpool recommends placing a tray or sheet pan under the basket on the same rack or the one below.

Uneven crisping

Symptom: some pieces crisp, others stay soft. Crowding blocks the airflow. Spread food in a single layer with space around each piece.

Slow heating

Symptom: long cook times and weak browning even with the fan running. An element or temperature sensor problem keeps the oven below its setting.

Getting the most out of it

  • Use the rack position your manual specifies. Whirlpool lists position 3 on ovens with five rack positions and position 4 on ovens with seven, but says placement varies by cavity size.
  • Put a sheet pan under the basket to catch drips.
  • Lay food in a single layer.
  • Use a light coat of oil for breaded foods.
  • Clean grease from the oven after air frying so it doesn't smoke next time.

Air fry builds directly on convection hardware; what true convection means in an oven explains the fan and rear element it relies on. If your range's air fry mode has stopped crisping, book a range repair visit.

Worth knowing: Oven air fry is convection with faster air, so a quiet fan means no crisping.
